Our flagship spicy savory paste is Russian Pepper RED, which is made of premium grade serrano, cayenne, ancho, jalapeño and guajillo peppers. Medium heat RED’s constituent peppers range on the Scoville scale from 10,000-50,000 units, so the peppers’ flavors balance beautifully with their specific concentration of capsicum. These peppers are married to a suite of Middle Eastern spices in a salty, malt vinegar base to create the perfect equilibrium between pungency and savory.
RED is fat loving, transforming steaks, chicken, chicken wings, shrimp and lamb. It works great with cream cheese on fresh ciabatta baguette as hors d'oeuvres.
Dishes with versatile RED can be fried, broiled, baked, grilled and barbequed. Massage it into a ribeye steak, refrigerate for about 15 minutes, bring the broiler to temperature, cook the steak to desired doneness, and then serve the steak with the RED as the condiment. Similarly, one can chop raw chicken, massages in the RED, pan fry on medium and dinner is served (the rice and salad take longer). In scrambled tofu or eggs, Bloody Mary cocktails, sausages, pasta sauces, this paste is as versatile as it is unique.
Carbohydrates get all the help they need
As heat tolerance among our customer base ranges widely, we get customers who want a bit more heat than the RED. To satisfy this demand, we offer the picante Russian Pepper GOLD.
The marrying of habanero peppers with turmeric and the previously mentioned herb/spice profile has allowed us to offer an exotic paste that is absolutely engaging in Indian, Mexican, Lebanese, Hunan Chinese and Indonesian cuisines, to name but a few.
We drop it into noodle soups, noodle dishes, stir fries, fried rice and lentil beans. We discovered that massaging the GOLD into batonnet or allummete cut potatoes creates out-of-this world French fries or spreading it across boiled eggs with a touch of mayo.
Try it on sausages, or better yet with fried onions and ground turkey: this recipe may become your new favorite soft shell taco.
GREEN, a delicious blend of dill, garlic and jalapeno, is mild in character that uses RED’s basic herb profile. It goes great with fish especially salmon, stews, soups, vegetables, tomato sauces and lighter fare that needs a little hand-up to get to be delicious. GREEN is the perfect complement to those flavors in dishes that one wishes to enhance rather than overpower.

The Russian Pepper pastes are gluten-free and vegan.
Since some of the spices and herbs are imported, and as such are without their official USDA organic non-GMO designations. That said, the agricultural techniques of these ingredients have remained largely unchanged for hundreds of years and thus are organic and non-GMO by default.
